Naples: In Search of The Perfect Pizza

I've been catching up recently with Heston Blumenthal's series for a little while back now called 'In Search for Perfection' where Heston attempts to create dishes that accentuate what people perceive make the dish what it is. While I'm still a bit dubious about his 'perfect' Chinese roasted duck recipe (stringing duck skin to a wire rack is so not appetising), one thing stuck to mind... the perfect pizza.

So a group of like-minded people set off to Naples last weekend, the gateway to Mt Vesuvius, and also the birthplace of pizza to discover what makes for a great pizza. What we were greeted with was the Stazione Centrale, loads of construction, dingy back streets filled with piles and piles of rubbish, and nestled amongst it all was Ristorante Pizzeria Da Donato.

Welcoming and friendly staff whisked us quickly to our tables where we were given menus (in Italian). Food came quickly and boy was it worth the trip!

So what makes the perfect pizza? It's not just the slightly crisp slightly chewy thin crust, but also the freshness of the ingredients that are on it. I ended up going for the Buffalina, a very simple pizza with only a few ingredients of tomatoes, basil and buffalo mozzarella. What made it so spectacular what the sweetness of the tomatoes and the milkiness of the buffalo mozzarella as you cut into it. This really was special, so special in fact that we made a repeat-appearance the next night!
